Repeat after me: COOKIE ICE CREAM SANDWICHES DIPPED IN CHOCOLATE!!

The whole recipe is so simple that anyone can do it.
Plus, it’s perfect for summer. If you have people over and want to impress them with a dessert dish that you “slaved” all day to make… these are it!
Or when you’re craving something sweet after dinner… these cookie ice cream sandwiches will satisfy any sweet tooth.
Or when you get home after a long day of work… and all you want to do is throw your feet up on the couch, watch re-runs of Friends, and eat a giant bowl of ice cream…
Well, lucky you! You have these bad boys made and they’re waiting for you in the freezer. Not to mention they’re much more satisfying than just ice cream.
I made a huge batch over the weekend so I can grab one for dessert as SOON as I get home from my photoshoots next week.
Seriously, though… how good does Ice cream + Cookies + Chocolate sound?? Heavenly.
Here’s what you need:
Ingredients: Cookies (chocolate chip or red velvet), Dryer’s Slow Churned Classic Vanilla Ice Cream (1.5 qts), 1 bag of melting chocolate, 1 tablespoon coconut oil (6-8 servings)
Instructions:
Using an ice cream scoop, scoop 1 scoop Dreyer’s vanilla ice cream on to the flat side of cookie.
Take another cookie to sandwich the ice cream together, gently pushing down.
Transfer to freezer for 10 minutes.
Add chocolate and coconut oil to a microwave safe bowl.
Melt the chocolate in 30 second increments, stirring the chocolate every time until chocolate has completely melted.
Take the sandwiches out of freezer and dip the sandwiches on one side into the chocolate.
The chocolate should begin to harden.
Return to freezer for 10 minutes before eating.
