Now back to this lemon garlic chicken recipe.

I put together a little seasoning blend with items that you probably already have in your kitchen. It’s nothing special, but when you put it all together with the right chicken… *drools*

For chicken, I used Mary’s Chicken thighs (with skin) so that the top would get extra crisp while the inside remained juicy and tender.

Alright, let’s get into it.

Here’s what you need


2 lbs chicken thighs (about 5-6 pieces)

Olive oil

1 teaspoon salt

1 teaspoon pepper

1/2 teaspoon dried basil

1/2 teaspoon dried oregano

1/2 teaspoon red pepper flakes

2 lemons

Fresh oregano



Preheat the oven to 375 degrees.

Brush or spray baking sheet with olive oil.

Pat your chicken dry with paper towels. Then put the chicken on your baking sheet and rub olive oil on each piece of chicken.

In a separate bowl:

Squeeze half a lemon

Mince 2-3 garlic cloves

Add salt, pepper, basil, oregano and red pepper flakes.

Drizzle the seasoning mixture over each chicken thigh

Add thin lemon slices to the top of each thigh

Take the remaining garlic + lemon slices, and add to baking sheet.

Roast for 40 minutes or until chicken is ready (meat should not be pink).

For a finishing touch, add fresh oregano on top.

Viola! Perfection.
